{"id":8243,"date":"2007-10-30T21:00:00","date_gmt":"2007-10-30T21:00:00","guid":{"rendered":"https:\/\/bm.dev.synology.me\/?p=8243"},"modified":"2026-04-02T10:31:28","modified_gmt":"2026-04-02T10:31:28","slug":"la-masa-vedetelor","status":"publish","type":"post","link":"https:\/\/bm.dev.synology.me\/?p=8243","title":{"rendered":"La masa vedetelor"},"content":{"rendered":"<p align=\"justify\">Desenele a trebuit refacute din cauza ca nu indeplineau intocmai viziunea regizorului Cristi Puiu despre modul cum trebuia sa arate restaurantul, pe care toata lumea ar fi trebuit sa il identifice cu filmele regizate de Cristi Puiu sau cu Monica Barladeanu, una dintre actritele cu care a lucrat. Regizorul a fost atat cel ce s-a ocupat de pozitionarea pe piata a restaurantului, incepand de la denumire &#8211; aceeasi cu a casei sale de productie, Mandragora &#8211; si terminand cu felul cum a urmarit personal amenajarea viitorului restaurant. Cei trei parteneri au investit 600.000 de euro in casa memoriala a lui Stefan Luchian si au deschis acolo restaurantul La Mandragora la sfarsitul lunii septembrie 2006, aducand din Germania un bucatar ce lucrase inainte la un hotel de sapte stele din Dubai. <\/p>\n<p>Aducerea unui bucatar cat mai experimentat si original, programul scurt (cateva ore la pranz si seara), meniul restrans (in jur de patru-cinci feluri de mancare, doua-trei antreuri si doua-trei deserturi pregatite de bucataria restaurantului), precum si personalul numeros sunt principalele ingrediente care fac diferenta intre un restaurant cu pretentii si un restaurant normal. &bdquo;In Bucuresti nu exista exact ceea ce s-ar chema la nivel international restaurante de lux &#8211; foarte pretentioase, cu doua-trei stele Michelin sau fabulos de scumpe -, insa exista aproximativ 10-15 restaurante unde se poate manca elegant &#8211; mai precis acolo unde te duci sa mananci ce a pregatit bucatarul, nu o friptura pur si simplu&ldquo;, spune Anca Mitu, director al Privileg Catering. <\/p>\n<p>Exista insa cateva restaurante care au respectat aceste caracteristici, au ridicat piata prin preturi mai mari decat media si si-au castigat o parte din clientela in jurul informatiei ca restaurantul apartine unui anumit om de afaceri sau unei vedete. &bdquo;Nume precum Venera Arapu, Cristi Puiu sau Adrian Matei atrag de la sine prieteni sau admiratori ai acestora, asadar o parte din afacere e asigurata din start&ldquo;, spune Anca Mitu. Dar nu numai faptul ca patronii sunt recunoscuti atrage clientii, ci si faptul ca acestia s-au indreptat predominant spre un tip de restaurant-club care sa se potriveasca personalitatii lor, &bdquo;un loc in care le-ar placea si lor sa mearga sau sa isi invite prietenii&ldquo;, explica Anca Mitu. <\/p>\n<p>Un loc unde sa isi invite prietenii si partenerii de afaceri nu si-au facut doar actorii sau creatorii de moda, ci si bancherii. In total 23 de bancheri, dar si cativa oameni de afaceri din alte domenii pasionati de gastronomie &#8211; printre care Robert Rekkers (Banca Transilvania), Dan Pascariu (HVB Bank), Radu Ghetea (Asociatia Romana a Bancilor), Anca Ioan (Tiriac Holdings), George Michelis (Bancpost) sau Dragos Petrescu (City Grill) &#8211; au investit in ultimul an 1,5 milioane de euro pentru a deschide luna trecuta, in casa fostului prim-ministru Gheorghe Tatarascu, un restaurant care aspira la una sau chiar doua stele Michelin. <\/p>\n<p>Dragos Petrescu, general manager si actionarul principal al lantului de restaurante City Grill, precum si actionar la restaurantul Heritage (supranumit &bdquo;al bancherilor&ldquo;), considera ca Heritage trebuie sa se impuna ca un local unic pe piata: &bdquo;Este drept ca restaurantul e abia la inceput, dar filozofia este tocmai sa nu aiba concurenta si sa nu mai existe niciunul asemanator, nici macar in statele din jur&ldquo;, explica Dragos Petrescu. <\/p>\n<p>Prin ce se diferentiaza Heritage de un restaurant peste medie din Bucuresti? Dragos Petrescu spune ca in primul rand conteaza bucatarul (David Contant este &bdquo;chef&ldquo; de doua stele Michelin, clasificare pe care o detin aproximativ 70 de bucatari in lume), in al doilea rand atmosfera (eticheta, tinuta obligatorie, meniul in franceza), iar in al treilea rand scopul in sine al deschiderii restaurantului. &bdquo;Acest restaurant a fost deschis din dorinta actionarilor de a avea un loc deosebit unde sa isi invite partenerii de afaceri la masa&ldquo;, explica Dragos Petrescu, subliniind ca un restaurant ca Heritage nu poate fi privit ca un centru de profit. <\/p>\n<p>&bdquo;Cheltuielile lunare ale Heritage sunt in jur de 100.000 de euro, deoarece personalul este de inalta calificare si platit la standarde internationale, utilitatile costa mult, deoarece s-a folosit un sistem performant de climatizare, iar toate ingredientele sunt proaspete si pregatite in ziua respectiva&ldquo;, mai spune Petrescu. Date fiind cheltuielile, Dragos Petrescu nu prea crede ca restaurantul va intra curand pe profit: &bdquo;Este posibil ca intr-un an sau poate doi sa fie clasificat Michelin &#8211; noi speram la doua stele &#8211; si atunci profiturile sa apara, desi si costurile vor creste. Dar oricum, actionarii nu se asteapta la profit din acest restaurant, ci poate cel mult la o recuperare a investitiei facute&ldquo;. <\/p>\n<p>In schimb, celelalte restaurante din Bucuresti pozitionate peste medie se asteapta la profit. Dragos Petrescu considera ca este o atitudine normala: &bdquo;Restaurante precum Casa di David, Balthazar, Aquarium, Mandragora sau Mazagran sunt restaurante foarte potrivite cu clientela lor &#8211; parte mondena, parte cu venituri mari si foarte mari si cu pretentii in privinta serviciilor -, dar sunt si retete facute pentru a atrage profit&ldquo;. <\/p>\n<p>Si chiar atrag: unul dintre actionarii restaurantului Balthazar, Venera Arapu (care mai este actionara si la reteaua de patiserii French Bakery, la restaurantul Red Bistro, cafeneaua Market 8 si clubul Gaia), estimeaza profitul obtinut de Balthazar la o treime din cifra de afaceri (aproximativ 700.000 de euro anul trecut). Venera Arapu, creatoare de moda, a investit impreuna cu fostul ei sot Dinu Cismarescu, precum si cu asociata sa Madalina Dorobantu in mai multe proiecte in domeniul gastronomiei. Primul a fost Balthazar, deschis in 2002 in urma unei investitii de 500.000 de euro. Au urmat investitia intr-o fabrica de produse de patiserie ale carei produse se vand in reteaua French Bakery, care va ajunge in aceasta toamna la zece unitati, precum si cea in cafeneaua Market 8 si cea in clubul Gaia (care are acum doua localuri, de iarna si de vara). Venera Arapu va mai investi in acest domeniu, pregatind impreuna cu Madalina Dorobantu trei proiecte: un lant de lux de restaurante asiatice, primul urmand a fi deschis in aceasta toamna in zona Dorobanti, un restaurant alaturi de clubul Gaia de vara (pe malul lacului Floreasca) si un restaurant pozitionat la fel ca Balthazar, cu un alt tip de bucatarie. <\/p>\n<p>Venera Arapu este de acord ca numele ei a actionat ca un magnet pentru a atrage clientela pentru restaurantele sau celelalte proiecte din domeniul gastronomiei pe care le-a deschis: &bdquo;Cred ca prietenii, partenerii mei si persoanele care imbraca haine din colectiile mele sunt clientela care predomina in proiectele unde sunt actionar&ldquo;. <\/p>\n<p>Si Octavian Popescu, managerul si coactionarul restaurantului La Mandragora, considera ca un astfel de restaurant aduce profit. La cheltuieli lunare de 30.000 de euro, Octavian Popescu estimeaza ca restaurantul produce lunar aproximativ 20-25% profit &#8211; asadar in jur de 6-7.000 de euro. &bdquo;Nu este mare, dar atat ne permite deocamdata faptul ca incercam sa ne amortizam si investitia pe care am facut-o aici, iar in acelasi timp sa reinvestim tot in dezvoltarea localului&ldquo;, explica Popescu, care a lucrat din 1990 in Germania in domeniul restaurantelor si s-a intors cu trei ani in urma pentru a deschide o afacere la Bucuresti. Din Germania l-a cunoscut si l-a adus pe Peter Paul Kopij, chef-ul in functie de care actionarii au decis ce tip de restaurant sa faca. &bdquo;In Germania am invatat ca un bucatar deosebit este totul la un restaurant ca acesta si am decis ca Paul ne poate dezvolta afacerea foarte bine, astfel ca jumatate din munca pentru restaurant a fost deja gata cand am batut palma cu el&ldquo;, explica Octavian Popescu. Ce face Paul Peter Kopij? Are un program asemanator cu chef-ul de la alte restaurante de acelasi profil: vine la ora 13 la serviciu, pregateste fonde (baza pentru sosuri, din care se face ulterior orice sos), alege carnea si legumele care vor fi folosite, gateste inghetata si toate deserturile. Toate acestea pana la ora 18, cand restaurantul se deschide, iar orice fel de mancare din meniu (care cuprinde aproximativ 10-12 feluri) este pregatit pe loc. Kopij este ajutat in bucatarie de sapte persoane, dintre care trei sunt bucatari. &bdquo;Sunt destui pentru un restaurant deschis doar seara, cu bucataria care functioneaza doar intre 18 si 23, dar sunt prea putini pentru a avea deschis si la pranz&ldquo;, explica Popescu. <\/p>\n<p><!--nextpage--><\/p>\n<p align=\"justify\">Program limitat au mai multe restaurante din aceasta categorie: Casa Vernescu este de asemenea deschisa doar seara, Heritage este deschis trei ore la pranz si seara, acelasi program avandu-l si Cupola, restaurantul principal al hotelului JW Marriott. Sunt insa si restaurante peste medie cu program normal, de la jumatatea zilei pana tarziu in noapte. Restaurantul Noblesse functioneaza astfel, fiind deschis de la ora 12 pana la ultimul client. Noblesse are bucatar roman (Orlando Zaharia) si 25 de angajati la 62 de locuri. Aceasta inseamna o medie de 2,4 clienti care revin fiecarui angajat. &bdquo;Este o medie corecta&ldquo;, spune Anca Mitu, conform unor reguli nescrise ale ospitalitatii internationale, care spun ca o medie corecta intr-un restaurant peste medie, dar nu de lux, este de 2 pana la 4 clienti per angajat. <\/p>\n<p>Noblesse este unul dintre restaurantele de top deschise de o persoana ce nu apare in revistele lucioase. De fapt, este al unei persoane al carei nume nu apare mai deloc nicaieri, si anume al lui Sorin Matache, un om de afaceri care mai detine cateva mici magazine in Craiova, revenit in Romania dupa 1990 din Franta. Sorin Matache a cumparat imobilul in 1999 cu intentia de a-l transforma in propriul domiciliu. S-a decis sa il faca insa restaurant, observand ca nu ar avea concurenta in zona, si a investit peste 2 milioane de euro in patru ani pentru a renova imobilul si a-l transforma in restaurant. <\/p>\n<p>Anul trecut, afacerile Noblesse au ajuns la 420.000 de euro (1,36 milioane de lei), iar pentru acest an Sorin Matache se asteapta la o crestere de cel putin 40%. Cresterea va veni in primul rand din extindere: &bdquo;Este vorba de doua etape de extindere: o data prin deschiderea etajului superior, in curs de amenajare si care va fi spectaculos ca rafinament al detaliilor si amenajarii, plus un Cigar Club, in mansarda cladirii&ldquo;, explica Sorin Matache, care a mai investit recent si intr-o cafenea in zona Pietei Victoriei, numita Chianti. <\/p>\n<p>O afacere de familie gandita in domeniul restaurantelor, dar destul de discreta, este cea a familiei Meita. Teodor Meita detine si conduce restaurant-clubul McMoni&#8217;s, din zona Agronomiei din Bucuresti. Teodor Meita, ce pregateste deschiderea unui hotel cu 70 de camere in Piata Rosetti, a deschis McMoni&#8217;s in 1993, numind restaurantul dupa numele fiului sau, Moni. La randul sau, Moni Meita si-a botezat lantul de restaurante pe care l-a initiat cu cinci ani in urma dupa numele fiului sau, David. Casa di David are acum doua localuri si este unul dintre cele mai cunoscute din Bucuresti pe acest segment. <\/p>\n<p>Meita jr. spune ca are in total aproape 100 de angajati la cele trei restaurante (al treilea fiind restaurantul El Capitan din Snagov), dar nu vorbeste despre cifrele sale de afaceri. &bdquo;Pot spune doar ca am afaceri profitabile, deoarece intentionez sa ma mai extind&ldquo;, a spus Moni Meita, care nu planuieste sa deschida mai mult de un restaurant la unul-doi ani. &bdquo;Nu pot pastra calitatea serviciilor, plus ca nu pot sa urmaresc afacerea&ldquo;, precizeaza omul de afaceri. Moni Meita precizeaza ca doreste sa extinda nu numai conceptele pe care le-a dezvoltat deja, ci doreste sa intre si pe segmentul pentru clasa medie, prin deschiderea unui nou lant de restaurante, despre care va putea spune mai multe abia in 2008. <\/p>\n<p>De la restaurant de top la restaurant pentru clasa medie a evoluat si Slobodan Lazic, proprietarul restaurantului Aquarium, care va deschide in curand oficial restaurantul Balkan Grill. &bdquo;Aquarium a avut tot timpul un curs ascendent si ne-a permis sa ne gandim la extindere&ldquo;, spune Lazic, care prefera sa nu dea date financiare, dar spune ca profitul a reprezentat anul trecut in jur de o treime din cifra de afaceri. &bdquo;Este o afacere profitabila cea cu restaurante, dar de multe ori nu iti permite o extindere foarte mare, ci doar destul cat sa iti indeplinesti niste visuri&ldquo;, spune Lazic, care face acum naveta intre Romania si Serbia, tara lui de provenienta, unde are de asemenea afaceri, inclusiv in domeniul gastronomiei. <\/p>\n<hr \/>\n<p>\n<strong>Cat costa un restaurant<\/p>\n<p><\/strong>Cheltuielile lunare ale unui restaurant sunt esentiale pentru modalitatea in care acesta se pozitioneaza pe piata.\u00a0Cheltuieli mai mici nu inseamna calitate mai slaba, ci doar alt tip de bucatarie si de produse folosite. <\/p>\n<div>&#8211; 100.000 de euro pe luna sunt cheltuielile restaurantului Heritage<\/div>\n<div>&#8211; 30.000 de euro pe luna sunt cheltuielile restaurantului La Mandragora<\/div>\n<div>&#8211; 15.000 de euro pe luna sunt cheltuielile unui restaurant La Mama<\/div>\n<div>\u00a0<\/div>\n<div>\u00a0<\/div>\n<div><strong>Cine sunt proprietarii<\/strong><\/div>\n<div>\u00a0<\/div>\n<div>Oamenii de afaceri care au preferat sa investeasca in restaurante de top sunt de multe ori pasionati de gastronomie, dar de cele mai multe ori sunt persoane pentru care deschiderea unui restaurant necesita una din calitatile dobandite in alte afaceri: atractia pentru design sau pentru hotelarie. <\/div>\n<p align=\"justify\">\n<table style=\"BORDER-RIGHT: medium none;
