Este rezumatul parcursului lui Ionu\u0163 Isache, care, \u00een urm\u0103 cu \u015fase ani, a ales s\u0103 pun\u0103 pasiunea pentru licoarea preparat\u0103 din cele mai ispititoare \u015fi aromate boabe \u00eentr-un loc pe frontispiciul c\u0103ruia st\u0103 scris Black Habit.<\/strong><\/p>\n<p>\n<img 01=\"\" 1.tur=\"\" appdata=\"\" box:=\"\" c:=\"\" file:=\"\" local=\"\" msohtmlclip1=\"\" temp=\"\" text=\"\" users=\"\" \/>Cred c\u0103 ce a contat foarte mult pentru mine, \u00eenc\u0103 de la \u00eenceput, a fost c\u0103 am crezut enorm de mult \u00een visul meu, l-am conturat \u00een cele mai mici detalii \u015fi l-am f\u0103cut s\u0103 prind\u0103 via\u0163\u0103. Dup\u0103 doi ani de lucru \u00eentr-o alt\u0103 cafenea, am realizat c\u0103 vreau un loc doar al meu. Iar dup\u0103 multe op\u0163iuni \u015fi imagina\u0163ie, am ajuns la un ideal: Black Habit\u201d, poveste\u015fte Ionu\u0163 Isache. De la un job \u00een transport \u015fi logistic\u0103 a trecut la un altul, \u00eentr-o cafenea, unde a \u00eenv\u0103\u0163at foarte mult din ceea ce \u015ftie ast\u0103zi despre aceast\u0103 lume.<\/p>\n<p>\nC\u00e2nd s-a decis c\u0103 vrea o cafenea a lui, a pus la b\u0103taie o investi\u0163ie de aproximativ 60.000 de euro pentru aparatur\u0103, mobilier \u015fi amenajarea spa\u0163iului ales, undeva aproape de Pia\u0163a Victoriei, dup\u0103 care \u00eenc\u0103 cel pu\u0163in pe at\u00e2t a fost investit \u00een cei \u015fase ani de func\u0163ionare. \u201eChiar \u015fi \u00een prezent continu\u0103 dezvoltarea cafenelei, cu introducerea unui meniu nou de pizza, pentru care am alocat un buget de 25.000 de euro. Investi\u0163ia cea mai de pre\u0163 este \u00eens\u0103 cea f\u0103cut\u0103 \u00een echip\u0103, \u00een cursuri pentru dezvoltarea at\u00e2t profesional\u0103, c\u00e2t \u015fi personal\u0103 a oamenilor, \u00een timpul alocat celor nou-veni\u0163i, de exemplu. Apreciez foarte mult echipa mea, astfel c\u0103 multe resurse se \u00eendreapt\u0103 \u015fi c\u0103tre ea.\u201d<\/p>\n<p>\nR\u0103m\u00e2n\u00e2nd \u00een sfera cifrelor, Black Habit a ajuns \u00een 2023 la o cifr\u0103 de afaceri de peste 1,3 milioane de lei, \u00een cre\u015ftere cu 30% fa\u0163\u0103 de anul precedent, \u00een timp ce echipa a crescut de la \u015fase, la \u015fapte angaja\u0163i. \u201eNe concentr\u0103m, de la \u00eenceputul lunii august, pe un nou proiect: vom avea \u015fi pizza \u00een meniul nostru. A fost feedbackul clien\u0163ilor \u015fi noi l-am perceput exact ca pe ceva ce ne lipsea. Pe l\u00e2ng\u0103 brunch-ul deja cunoscut, voiam s\u0103 ad\u0103ug\u0103m \u00eenc\u0103 un element meniului nostru. Avem foarte mul\u0163i clien\u0163i \u015fi \u00een intervalul 13:00-17:00, deci acum \u00eei putem primi \u015fi cu o pizza delicioas\u0103.\u201d Nu a fost un proiect simplu, m\u0103rturise\u015fte Ionu\u0163 Isache, deoarece sunt multe detalii pe care un client final nu le cunoa\u015fte, \u00eens\u0103 antreprenorul, \u00eempreun\u0103 cu echipa, muncesc zi \u015fi noapte pentru cele mai mici detalii.<\/p>\n<p>\nAu fost cursuri de urmat, c\u0103ut\u0103ri pentru cele mai bune ingrediente, calcule pentru costuri versus pre\u0163 de v\u00e2nzare \u015fi mult mai multe. Dar au izb\u00e2ndit \u00een cele din urm\u0103. \u201eComunitatea noastr\u0103 este extrem de divers\u0103: avem clien\u0163i care vin de mult timp \u00een fiecare diminea\u0163\u0103 \u00eenainte de serviciu la noi. Sunt \u00abcorporati\u015ftii\u00bb care apreciaz\u0103 o cafea bun\u0103 \u015fi e deja \u00een ritualul lor zilnic. Apoi avem micii antreprenori care se bucur\u0103 s\u0103 ajute un alt mic antreprenor, adic\u0103 pe noi. De asemenea, avem echipe \u00eentregi care organizeaz\u0103 mici \u00eent\u00e2lniri de genul team building la noi la loca\u0163ie. A\u015fadar, clien\u0163ii sunt diver\u015fi \u015fi suntem tare recunosc\u0103tori pentru fiecare dintre ei.\u201d<\/p>\n<p>\nCafeaua \u015fi brunch-ul sunt preparate \u00een localul Black Habit de pe Calea Grivi\u0163ei, num\u0103rul 77, iar clien\u0163ii le pot consuma acolo sau \u00een regim takeaway. Pizza este \u015fi ea f\u0103cut\u0103 \u00een acela\u015fi loc, unde este preg\u0103tit tot timpul blatul cu o zi \u00eenainte, l\u0103sat la maturat \u00eentre 24 \u015fi 72 ore, dup\u0103 care este bun pentru preg\u0103tit pizza cu el. Pizza se poate servi pe terasa cafenelei sau \u00een regim takeaway, urm\u00e2nd s\u0103 fie disponibil\u0103 \u015fi pe platformele de food delivery. A fost u\u015for drumul p\u00e2n\u0103 aici? Deloc, spune Ionu\u0163 Isache, dar extrem de frumos. \u201eImagina\u0163i-v\u0103 o balan\u0163\u0103, pe care pui alternativ c\u00e2te pu\u0163in, c\u00e2t s\u0103 o \u0163ii \u00een echilibru.<\/p>\n<p>\nUneori, balan\u0163a \u00eenclin\u0103 c\u0103tre cele mai tari experien\u0163e, iar alteori c\u0103tre cele mai mari dificult\u0103\u0163i. Provoc\u0103rile cele mai mari sunt \u00een zona de autoriza\u0163ii sau toat\u0103 partea legal\u0103 a unui business.
