De la ea am mo\u015ftenit \u015fi ea mi-a cultivat sim\u0163ul pentru gusturi deosebite \u015fi fine \u015fi dragostea pentru frumos.\u201d A\u015fa \u00ee\u015fi \u00eencepe povesteA Casandra Rociu, cea care, din aceast\u0103 dragoste insuflat\u0103, a creat o afacere \u00een dreptul c\u0103reia st\u0103 ast\u0103zi numele Sucr\u00e9.<\/strong><\/p>\n<p>\nTot de la mama ei, Casandra a mo\u015ftenit \u015fi spiritul de antreprenor. Primele idei despre ce \u00eenseamn\u0103 un business \u00ee\u015fi aminte\u015fte c\u0103 le-au dezb\u0103tut \u00een timp ce se delectau cu&#8230; o felie de tort. \u201e\u00cemi aduc aminte c\u0103 prima discu\u0163ie a fost c\u00e2nd eram \u00een clasa a noua, tocmai ne mutaser\u0103m \u00eentr-o cas\u0103 nou\u0103, cump\u0103rat\u0103 de mama, \u015fi f\u0103ceam un tort \u00eempreun\u0103. Timp de opt ani, a creat aranjamente \u015fi decoruri cu flori, iar dup\u0103 na\u015fterea feti\u0163ei, Casandrei i-a reap\u0103rut \u00een minte ideea unei cofet\u0103rii. \u015ei a \u00eenceput s\u0103 lucreze la ea. \u201eAm mers \u00een paralel aproape doi ani cu evenimentele \u015fi cofet\u0103ria, dup\u0103 care am decis s\u0103 r\u0103m\u00e2nem doar cu cofet\u0103ria. A fost un succes de la \u00eenceput \u015fi presupunea foarte mult\u0103 implicare. Partea cu evenimentele cerea acela\u015fi lucru, dar \u00een continu\u0103 mi\u015fcare, iar eu nu mai eram dispus\u0103 s\u0103 sacrific zile \u015fi nop\u0163i, av\u00e2nd un copil mic. A pornit cu clasicul ecler, din care exist\u0103 ast\u0103zi aproximativ 15 sortimente care se perind\u0103 prin vitrine, devenind un produs-emblem\u0103. Portofoliul a continuat \u00eens\u0103 s\u0103 se dezvolte, la fel ca businessul, care \u00eenseamn\u0103 ast\u0103zi nu una, ci dou\u0103 cofet\u0103rii &#8211; \u00een Sibiu \u015fi \u00een Cluj-Napoca, cea de-a doua fiind deschis\u0103 \u00een noiembrie 2021.<\/p>\n<p>\n\u201e\u00cemi place s\u0103 folosesc ingrediente pure, batoane de vanilie de Madagascar, boabe Tonka, piper roz, piureuri pure de fructe exotice \u015fi locale, ciocolat\u0103 belgian\u0103 de cea mai bun\u0103 calitate, fri\u015fc\u0103 natural\u0103 \u015fi unt german. Folosim c\u00e2t mai pu\u0163in zah\u0103r, am dezvoltat o linie de produse vegane f\u0103r\u0103 zah\u0103r \u015fi unele f\u0103r\u0103 gluten \u2013 sunt doar c\u00e2teva re\u0163ete, dar sunt delicioase. Inclusiv coloran\u0163ii din macarons sunt naturali.\u201d \u00cen laboratoarele Sucr\u00e9 se produce \u015fi \u00eenghe\u0163at\u0103 artizanal\u0103, iar din aceast\u0103 prim\u0103var\u0103 \u00ee\u015fi vor face loc \u00een meniu \u015fi pralinele de ciocolat\u0103 belgian\u0103 umplute cu creme diverse, de la arom\u0103 de violete la ganache de yuzu (un fruct din familia citricelor) \u015fi trufe negre, infuzii de ceai negru, matcha, cardamom \u015fi altele.<\/p>\n<p>\nTot \u00een prim\u0103vara aceasta, businessul va deveni func\u0163ional \u015fi online, urm\u00e2nd s\u0103 fac\u0103 livr\u0103ri na\u0163ionale pentru produsele care rezist\u0103 la transport. \u201eUn proiect separat pe care l-am \u00eenceput deja este produc\u0163ia de ciocolat\u0103 bean-to-bar, adic\u0103 direct din boabele de cacao. Avem furnizori de boabe din America de Sud, Africa \u015fi Asia, exist\u0103 o multitudine de soiuri \u015fi arome. Aceasta este o provocare nou\u0103, pentru c\u0103 po\u0163i crea de la zero ceva fantastic, natural 100%.\u201d Cum a ajuns Casandra aici? Specializ\u00e2ndu-se continuu, ceea ce face \u015fi azi. A f\u0103cut cursuri, a citit, a testat, a inventat re\u0163ete, a repetat \u2013 singur\u0103, apoi cu echipa ei de 13 angaja\u0163i. Se inspir\u0103 din ce fac oamenii pe care \u00eei admir\u0103, mai ales din str\u0103in\u0103tate, se inspir\u0103 din mirodenii \u015fi arome, din ce observ\u0103 \u015fi ce re\u0163ine atunci c\u00e2nd gust\u0103 ceva nou \u2013 sau nu.<\/p>\n<p>\nA ajuns aici \u015fi \u00een urma unor investi\u0163ii, care, de-a lungul timpului, au atins pragul de 200.000 de euro. Dincolo de cofet\u0103riile proprii, Casandra Rociu are colabor\u0103ri cu restaurante \u015fi cafenele \u015fi face bufete de dulciuri pentru evenimente private \u015fi corporate. Un kilogram de tort cost\u0103 \u00eentre 125 \u015fi 180 de lei, pre\u0163ul unul ecler este \u00eentre 15 \u015fi 20 de lei, iar cel al unui macaron \u2013 de 6 lei. \u201eAvem clien\u0163i care vin vara aproape zilnic doar pentru \u00eenghe\u0163at\u0103, clien\u0163i care ne aleg pe noi s\u0103 facem parte din cele mai speciale zile ale vie\u0163ii lor \u015fi asta ne onoreaz\u0103.\u201d Cea mai mare provocare?<\/p>\n<p>\n\u201eDe departe, for\u0163a de munc\u0103\u201d, m\u0103rturise\u015fte Casandra. Este greu s\u0103 g\u0103seasc\u0103 oameni specializa\u0163i sau oameni cu experien\u0163\u0103 \u015fi c\u0103rora s\u0103 le \u015fi plac\u0103 ce fac. Pentru c\u0103 f\u0103r\u0103 pasiune nu po\u0163i rezista, munca \u00een produc\u0163ie nefiind deloc u\u015foar\u0103. A ajuns acum s\u0103 aib\u0103 o echip\u0103 puternic\u0103, dar nu a fost mereu a\u015fa.
