Cum po\u0163i s\u0103 ai parte de fine dining la margine de sat?"},"content":{"rendered":"<p>\n<strong>Sc\u0103ldat\u0103 de soare \u015fi \u00eenconjurat\u0103 de vii, Casa boierului din deal pare un conac de pe timpuri, restaurat cu migal\u0103. \u00cen fapt, sub aspectul istoric se ascunde o construc\u0163ie veche de numai c\u00e2\u0163iva ani, proiectat\u0103 de o echip\u0103 t\u00e2n\u0103r\u0103 de arhitec\u0163i talenta\u0163i. \u00cen spatele proiectului st\u0103 Laura Mocanu, o antreprenorare care, la 38 de ani, a decis s\u0103 \u00ee\u015fi urmeze visul \u015fi s\u0103 descopere tainele gastronomiei de lux, transpun\u00e2nd toate secretele deprinse \u00een pensiunea deschis\u0103 \u00een jude\u0163ul natal, Buz\u0103u.<\/strong><\/p>\n<p>\nDe profesie economist, Laura Mocanu munce\u015fte \u00eenc\u0103 din timpul facult\u0103\u0163ii \u00een comer\u0163. Businesul de baz\u0103 al antreprenoarei de 48 de ani este comer\u0163ul cu carburan\u0163i auto. \u201eLa v\u00e2rsta de 38 de ani am decis s\u0103 \u00eenv\u0103\u0163 buc\u0103t\u0103rie cu acte \u00een regul\u0103 \u015fi am urmat, timp de \u015fase luni, cursurile \u015fcolii Bella Italia Br\u0103ila, \u015fcoala de buc\u0103t\u0103ri. Mentor mi-a fost maestrul \u00een art\u0103 culinar\u0103 Cerasela Lungu, care apoi mi-a devenit o bun\u0103 prieten\u0103\u201d, poveste\u015fte ea.<\/p>\n<p>\n\u00cen anii ce au urmat, antreprenoarea a construit echipa regional\u0103 \u201eCasa Boierului din Deal\u201d, cu care a participat la concursuri interna\u0163ionale de gastronomie la Luxemburg, Erfurth \u015fi Stuttgart. \u201eRezultatele au fost pe m\u0103sura muncii: bronz, argint, aur \u015fi multe aprecieri.\u201d<\/p>\n<p>\nIdeea construirii restaurantului-pensiune, amplasat \u00een zona cramelor de pe Dealul Mare, a ap\u0103rut \u00een urm\u0103 cu zece ani, c\u00e2nd a g\u0103sit \u201eacest loc minunat\u201d. Nu exagereaz\u0103 c\u00e2nd laud\u0103 frumuse\u0163ea \u00eemprejurimilor. Coco\u0163at\u0103 pe un deal la poalele c\u0103ruia stau \u00een\u015firuite casele comunei Pietroasele, cunoscut\u0103 drept locul \u00een care a fost descoperit cel mai cunoscut tezaur al Rom\u00e2niei, Clo\u015fca cu puii de aur, de pe cerdacul pensiunii po\u0163i admira, pe \u00eenserate, un apus de poveste, degust\u00e2nd un pahar de vin din produc\u0163ia anual\u0103 a familiei Mocanu. M\u0103rturise\u015fte c\u0103 pandemia a ajutat-o, d\u00e2ndu-i timpul necesar pentru aceasta. \u00cen acest moment, echipa este format\u0103 din 13 persoane (buc\u0103tari \u015fi osp\u0103tari).<\/p>\n<p>\n\u00cen ceea ce prive\u015fte designul restaurantului, acesta a fost realizat de o echip\u0103 format\u0103 \u201edin doi prieteni buni din Bucure\u015fti, Daniel Br\u0103tescu \u015fi Vlad Osiac\u201d. 90% din mobilier a fost realizat de c\u0103tre ei, firma Zetam \u015fi mae\u015ftri populari din zon\u0103, restul pieselor fiind achizi\u0163ionate conform proiectului. \u201eCei doi designeri au f\u0103cut studii la Muzeul \u0162\u0103ranului, \u00een zona noastr\u0103 dar \u015fi la oamenii locului, me\u015fteri populari ai zonei.\u201d<\/p>\n<p>\nParticiparea la numeroase evenimente, concursuri \u015fi t\u00e2rguri interna\u0163ionale a ajutat-o pe Laura Mocanu s\u0103 \u00ee\u015fi rafineze gusturile, permi\u0163\u00e2ndu-i s\u0103 aduc\u0103 \u00een jude\u0163 conceptul de fine dining de\u015fi spune modest\u0103 c\u0103 \u00eenc\u0103 nu e la acel nivel. \u201e\u00cemi place zona de fine dining deoarece te scoate din zona de confort a mesei clasice. Sunt de p\u0103rere c\u0103 rom\u00e2nii au \u00eenceput s\u0103 \u00een\u0163eleag\u0103 \u015fi s\u0103 accepte acest mod de servire a mesei. Este mai mult o experien\u0163\u0103 culinar\u0103, nu o mas\u0103 care s\u0103 \u0163in\u0103 de foame\u201d.<\/p>\n<p>\n\u00cen prezent, restaurantul are o capacitate de 60 de locuri la interior \u015fi alte 60 de locuri la exterior. \u201eNu a\u015f putea spune c\u00e2\u0163i clien\u0163i ne-au trecut pragul, deoarece clien\u0163ii no\u015ftri au devenit prietenii no\u015ftri. Ei revin pentru a trece prin tot meniul, dar \u015fi pentru a \u00eencerca noile meniuri pe care noi le schimb\u0103m sezonier. Ca marj\u0103 de pre\u0163, ne situ\u0103m \u00eenc\u0103 \u00een zona medie\u201d, explic\u0103 Laura Mocanu. \u201eAm \u00eenceput s\u0103 cre\u015ftem \u00eencet ca nivel de venituri. \u0162in\u00e2nd cont c\u0103 lucr\u0103m de joi p\u00e2n\u0103 duminic\u0103, pr\u00e2nz \u015fi cin\u0103, am ajuns s\u0103 avem venituri de aproximativ 50.000-75.000 lei pe lun\u0103.\u201d<\/p>\n<p>\n\u00cen ceea ce prive\u015fte planurile de viitor ale antreprenoarei, acestea includ extinderea capacit\u0103\u0163ii de cazare, exist\u00e2nd planuri de a o m\u0103ri cu 4-8 c\u0103su\u0163e individuale, adic\u0103 16-32 de locuri, ivesti\u0163ia aferent\u0103 ridic\u00e2ndu-se la aproximativ 200.000 de euro. \u201e\u0162in\u00e2nd cont c\u0103 noi suntem deschi\u015fi de joi p\u00e2n\u0103 duminic\u0103, num\u0103rul mediu de \u00eennopt\u0103ri este de trei pe s\u0103pt\u0103m\u00e2n\u0103. Primim turi\u015fti \u00een toate perioadele anului, \u0163in\u00e2nd cont c\u0103 zona este minunat\u0103 \u00een fiecare zi din an.
