Mul\u0163i ajung s\u0103 se \u00eentrebe cu ce op\u0163iuni alimentare a r\u0103mas, dup\u0103 eliminarea at\u00e2tor ingrediente, \u00eens\u0103 Marius spune c\u0103 variantele nu sunt deloc pu\u0163ine.<\/strong><\/p>\n<p>\nO problem\u0103 de s\u0103n\u0103tate a primului s\u0103u copil \u00een 2016, pe vremea c\u00e2nd avea doi ani, l-a condus pe Marius c\u0103tre abordarea unei diete raw vegane. \u201eTrebuie s\u0103 recunosc, la \u00eenceput a fost greu s\u0103 g\u0103tesc f\u0103r\u0103 carne, ca s\u0103 nu mai amintesc de lapte, ou\u0103, p\u00e2ine din f\u0103in\u0103 alb\u0103, f\u0103r\u0103 zah\u0103r\u201d, \u00ee\u015fi aminte\u015fte Marius Indrie\u015f, \u00een v\u00e2rst\u0103 de 36 de ani.<\/p>\n<p>\nPe m\u0103sur\u0103 ce timpul a trecut, spune c\u0103 a tot g\u0103sit variante, c\u0103 a \u00eenceput s\u0103 se simt\u0103 mai bine, ba chiar, cu deserturi raw vegane \u00een rucsac, a reu\u015fit s\u0103 parcurg\u0103 un traseu de aproape 10.000 de kilometri cu bicicleta. \u015ei a g\u0103sit, \u00een acela\u015fi timp, \u015fi energie pentru a lucra la proiectul Dumbrawa. \u201eEste pentru cei care doresc s\u0103 fac\u0103 o schimbare \u00een via\u0163a lor, a familiei lor. \u015etiu foarte bine c\u00e2t de greu \u00ee\u0163i este s\u0103 g\u0103se\u015fti alternative la deserturile din comer\u0163 pline de zah\u0103r \u015fi coloran\u0163i, la ciocolat\u0103, la batoane, la sucuri, la p\u00e2ine. \u015ei eu am trecut prin exact acelea\u015fi lucruri. \u015ei mie mi-a fost greu la \u00eenceput.\u201d Tot ce se g\u0103se\u015fte \u00een meniul Dumbrawa este preparat de Marius \u015fi de so\u0163ia lui. El se ocup\u0103 de deserturi, iar partenera lui \u2013 de preparatele culinare. Niciunul nu are experien\u0163\u0103 \u00een domeniu, niciunul nu a mai lucrat pe aceast\u0103 ni\u015f\u0103 \u015fi nu are nici cursuri de profil la baz\u0103. Sunt autodidac\u0163i, iar ideile de meniuri le creeaz\u0103 tot pe cont propriu.<\/p>\n<p>\nPentru a pune pe picioare localul din Oradea au investit aproape 30.000 de euro. \u201eAm deschis \u00een martie 2021 ca laborator de pr\u0103jituri, cu o medie de trei clien\u0163i pe zi.\u00cen formatul actual, de mic bistro vegan, suntem din decembrie 2021. \u00cen lunile octombrie \u015fi noiembrie am avut \u00eenchis pentru modific\u0103ri aduse spa\u0163iului plus a\u015fteptarea avizelor necesare.\u201d A\u015fa c\u0103 ast\u0103zi, \u00een meniul Dumbrawa, se reg\u0103sesc preparate diverse, de la ov\u0103z la burgeri. O felie de tort, de pild\u0103, cost\u0103 22 de lei, o sup\u0103-crem\u0103 este 14 lei, un smoothie \u2013 15 lei, iar un burger vegan \u2013 22 de lei. Carnea, laptele, ou\u0103le, f\u0103ina alb\u0103 \u015fi zah\u0103rul nu-\u015fi g\u0103sesc locul \u00een niciunul dintre preparate. \u201eCred c\u0103 undeva la 50-60% dintre clien\u0163ii no\u015ftri sunt cei cu diverse probleme de s\u0103n\u0103tate, intoleran\u0163a la lactoz\u0103 fiind cea mai comun\u0103 problem\u0103. Problemele sunt fie ale lor, fie ale celor din jurul lor sau din familie. Restul clien\u0163ilor \u00eel reprezint\u0103 cei care mai \u0163in post, \u00een vreme ce al\u0163ii \u00eencearc\u0103 produsele \u015fi revin pentru c\u0103 le plac. Al\u0163ii vin doar pentru supe creme, de exemplu\u201d, spune Marius Indrie\u015f despre clientela de la Dumbrawa.
