A descoperit aceast\u0103 tehnic\u0103 \u00een perioada 2011-2012, pe c\u00e2nd locuia la Berlin \u015fi studia teatrologie. Ce a urmat a fost un business cu arom\u0103 de p\u00e2ine proasp\u0103t scoas\u0103 din cuptor.<\/strong><\/p>\n<p>\nMi-a pl\u0103cut dintotdeauna s\u0103 g\u0103tesc, eram cumva orientat\u0103 spre lumea asta, f\u0103r\u0103 s\u0103 m\u0103 g\u00e2ndesc \u00eens\u0103 c\u0103 a\u015f putea duce acest interes \u00een prim-plan vreodat\u0103. Asta \u00eens\u0103 p\u00e2n\u0103 s\u0103 \u00eencep s\u0103 preg\u0103tesc primele p\u00e2ini cu maia. \u00cen simplitatea sa extraordinar\u0103, acest aliment de baz\u0103, dus la esen\u0163a \u015fi \u00eenceputurile sale prin folosirea acestei metode tradi\u0163ionale de preg\u0103tire, a ajuns s\u0103 m\u0103 fascineze \u00eentr-at\u00e2t \u00eenc\u00e2t s\u0103 \u00eemi permit s\u0103 m\u0103 g\u00e2ndesc la ceva mai mult dec\u00e2t preg\u0103tirea p\u00e2inilor acas\u0103 pentru familie \u015fi prieteni\u201d, poveste\u015fte Andreea Care\u0163u. Spre sf\u00e2r\u015fitul lui 2013, s-a \u00eentors \u00een Bucure\u015fti dup\u0103 \u015fase ani de str\u0103in\u0103tate, iar peste un an a deschis firma \u015fi peste aproape \u00eenc\u0103 unul avea primul mic atelier, construit pe proprietatea unei m\u0103tu\u015fi.<\/p>\n<p>\n\u201eAm \u00eenceput timid, merg\u00e2nd \u00een weekenduri la t\u00e2rguri la Muzeul \u0162\u0103ranului Rom\u00e2n. A fost o perioad\u0103 \u00een care am testat multe re\u0163ete, nu doar de p\u00e2ine, ci \u015fi de dulciuri. Dup\u0103 ce am trecut c\u00e2teva luni prin aceast\u0103 experien\u0163\u0103, mi-am dat seama c\u0103, pentru ce am eu de oferit, cel mai bine ar func\u0163iona formatul unei brut\u0103rii cu propriul magazin \u015fi atelierul \u00een spate.\u201d A\u015fa c\u0103 a renun\u0163at la primul atelier \u015fi a mutat toat\u0103 opera\u0163iunea \u00een Pia\u0163a Amzei. Iar \u00een decembrie 2016 a reu\u015fit s\u0103 deschid\u0103 Miez Brut\u0103rie Artizanal\u0103 \u00een actuala loca\u0163ie, din Pia\u0163a Amzei.<\/p>\n<p>\nAtunci c\u00e2nd a pornit, Andreea Care\u0163u nu avea niciun fel de experien\u0163\u0103 antreprenorial\u0103 \u015fi nici nu lucrase altceva dec\u00e2t joburi simple, de student. Nu a f\u0103cut cursuri specializate, dar a \u00eenv\u0103\u0163at mult din c\u0103r\u0163i \u015fi prin repetate \u00eencerc\u0103ri practice. A continuat s\u0103 experimenteze mult \u00een primii doi ani \u00een spa\u0163iul din Amzei p\u00e2n\u0103 a ajuns la o stabilitate \u00een ceea ce prive\u015fte sortimentele. \u00cen aceast\u0103 perioad\u0103 a \u015fi muncit foarte mult \u00een atelier. \u201eInvesti\u0163ia ini\u0163ial\u0103 a fost de aproximativ 85.000 de euro, \u00eemprumut de la familia mea. Cifra de afaceri \u00een 2020 a fost de 1,3 milioane de lei (circa 270.000 de euro \u2013 n. red.) \u015fi avem 15 angaja\u0163i, dintre care \u015fase full-time \u015fi restul part-time.\u201d<\/p>\n<p>\nAnul trecut, dincolo de problemele financiare din perioada aprilie-august, c\u00e2nd firma a \u00eenregistrat pierdere \u2013 o pierdere substan\u0163ial\u0103 \u00een anumite luni \u2013 Andreea Care\u0163u a avut tot felul de provoc\u0103ri legate de organizarea fluxului. \u201eA trebuit s\u0103 ne adapt\u0103m cererii schimbate, nu am \u015ftiut mereu s\u0103 prevedem ce se va \u00eent\u00e2mpla \u00een urm\u0103toarele c\u00e2teva zile, a\u015fa c\u0103 au fost zile \u00een care am r\u0103mas cu multe produse nev\u00e2ndute. Sunt mul\u0163umit\u0103 \u00eens\u0103 c\u0103 nu am fost nevoi\u0163i p\u00e2n\u0103 la urm\u0103 s\u0103 reducem echipa \u015fi c\u0103 lucrurile \u015fi-au revenit la normal pentru noi, ca \u00eencas\u0103ri, de prin octombrie 2020.\u201d<\/p>\n<p>\nPre\u0163urile p\u00e2inilor de la Miez variaz\u0103 \u00eentre 3,5 \u015fi 4 lei pentru p\u00e2inici, \u00eentre 9 \u015fi 14 lei pentru p\u00e2inile pe vatr\u0103 de 600 de grame, iar p\u00e2inea moale la tav\u0103 este 20 de lei. Un cookie cu ciocolat\u0103 cost\u0103 5 lei, pl\u0103cintele variaz\u0103 \u00eentre 11 \u015fi 16 lei, diferitele produse av\u00e2nd la baz\u0103 aluatul de foitaj cu unt \u2013 \u00eentre 11 \u015fi 16 lei. \u201eClien\u0163ii no\u015ftri nu se \u00eencadreaz\u0103 u\u015for \u00eentr-un anume profil. Primim vizite de la fel de fel de oameni, majoritatea foarte dr\u0103gu\u0163i, de la tineri la pensionari, p\u0103rin\u0163i \u015fi copii \u015fi a\u015fa mai departe.
